Cacao has deep roots in Bahia—both botanically and culturally. Our beans are grown using the traditional cabruca system:
A near-natural agroforestry that protects biodiversity and preserves the rainforest. We work with the Cabruca cooperative , an association of smallholder families who have been working with the forest for generations, not against it. All processing steps – from fermentation to packaging – take place in the region . This way, the entire value chain remains local, and you get a product with provenance, signature, and responsibility.

The production process is divided into two stages: first, the cocoa is harvested, opened, fermented, and dried. These steps all take place outdoors, where weather conditions have a direct impact on the cocoa:

  • 1. Cabruca-style cocoa cultivation

    Our cacao grows in the cabruca system: under the natural shade of large rainforest trees. This traditional cultivation method from southern Bahia protects biodiversity and preserves the ecosystem. The trees are cared for entirely by hand – mindfully, sustainably, and in harmony with nature.

  • 2. Harvesting & opening the cocoa fruits

    Only ripe cocoa fruits are harvested by hand – twice a year. Using machetes, we open the fruits directly on the plantation and carefully remove the seeds with their sweet and sour pulp. This step determines the quality and freshness of the final cocoa mass.

  • 3. Fermentation under banana leaves

    The fresh cacao seeds are fermented in wooden boxes lined with banana leaves for seven days, turned daily. This fermentation is essential: it breaks down bitter substances, develops aromas, and creates the basis for the full-bodied flavor of our cacao.

  • 5. Gentle roasting of the beans

    The dried cocoa beans are slowly roasted at low temperatures. This artisanal process enhances the delicate flavors and preserves valuable ingredients such as antioxidants.

  • 6. Peeling the cocoa beans

    After roasting, the beans are shelled. This step, often performed by hand, is important for obtaining pure cocoa nibs, which form the basis of high-quality cocoa.

  • 7. Grinding the nibs with stone mills

    The cocoa nibs are ground in traditional stone mills for at least 24 hours. This slow processing preserves the flavors and ensures a velvety texture of the chocolate mass.

  • 8. Tempering the cocoa

    The liquid cocoa mass is tempered through controlled cooling and heating. This process stabilizes the cocoa butter crystals and gives the chocolate its characteristic shine and perfect break.

  • 9. Pouring into molds – the finishing touches

    Finally, the tempered chocolate is poured by hand into individual molds. After cooling, unique bars are created that reflect the authentic taste of southern Bahia's cacao.

Why Cocoa

Unsweetened raw cacao is considered a true superfood because it is exceptionally nutrient-rich. It's bursting with vitamins, minerals, and bioactive plant compounds.

  • Theobromine – Gentle Energy: Cocoa contains theobromine, a natural alkaloid that provides a mild, long-lasting energy boost without causing nervous restlessness. It can promote cerebral circulation and lift mood.
  • Magnesium – Nerves and Regeneration: As an excellent source of magnesium, cocoa relaxes muscles, supports nerve and heart function, and has an antispasmodic effect. It can therefore contribute to stress reduction and promote regeneration.

  • Iron & Zinc – Blood Formation & Metabolism: Cocoa powder provides iron, which is important for red blood cell formation and oxygen transport, as well as zinc, which supports numerous enzymes and metabolic processes. Together, these trace elements promote a healthy energy balance.

  • Wellness & Mindfulness

    Cocoa is rich in nutrients for body and mind. It contains theobromine, which gently promotes alertness and relaxation, magnesium for muscle function and relaxation, and flavonoids (antioxidants) that strengthen circulation and the cardiovascular system. These "happy molecules" (anandamides) also enhance well-being.

The Brazilian Instituto Biodinâmico (IBD) verifies and confirms compliance with strict organic standards (IBD is the largest Brazilian certification body and IFOAM-accredited).
We also comply with EU organic guidelines and carry the EU organic logo. No pesticides or chemicals – for a healthy world.

Our company in Germany is also organic certified by the organic certification body: ÖkoP Zertifizierungs GmbH with the code number DE-ÖKO-037.

Independent laboratory analyses (BAV Institute) confirm our quality promise.

The nutritional analysis per 100 g shows:
Approximately 637 kcal of energy, 56.6 g of fat (including 35.0 g saturated fat), 13.6 g of protein, 15.2 g of fiber, and only about 1.2 g of sugar. Our cocoa also contains important minerals and is free from added sugar, dairy products, or additives.

Heavy metals:
The measured values ​​(e.g. cadmium 0.16 mg/kg, nickel 7.0 mg/kg) are well below the EU limits, so our cocoa can be enjoyed without any concerns.
